When most people eat pizza, they usually have a tossed green salad to accompany their pie, but coleslaw works just as well. In fact, serving a nice crisp coleslaw with pizza is a welcome change from the more traditional tossed or Caesar salad. This is especially true if the slaw features the flavors generally associated with Italian foods, including Roma tomatoes, garlic, onion, oregano, and basil. Yes, I know there’s already garlic in the Italian dressing, but we really like garlic!
Italian coleslaw recipe
What you’ll need:
Large bowl with fitted lid
Small mixing bowl
16-ounce bag slaw mix – no red cabbage or carrots added
3 small Roma tomatoes, finely diced
1 red bell pepper, diced
1 small zucchini, peeled and diced
2 tablespoons diced red onion
1 tablespoon fresh oregano
1 tablespoon fresh basil
1/2 cup bottled Italian dressing
1/2 cup sugar
1/4 cup red wine vinegar and oil dressing
1 teaspoon chopped garlic, with juice
Directions: Add bagged slaw mix to large bowl. Toss with diced tomatoes, red bell pepper, diced zucchini, red onion, oregano, and basil.
In the small mixing bowl, whisk together Italian dressing, sugar, red wine vinegar and oil, and garlic to make the dressing for the slaw. Pour dressing over vegetables and toss. Place lid on bowl and keep the coleslaw in the fridge until ready to serve.
