
Can you make pizza dough ahead of time?
I would like to make pizza for dinner tonight with a homemade crust. Last time I did it I cooked the pizza right away…I let the yeast and mix rise for 1 hour, top it and then cook it. Tonight I will be away before cooking time and wondered if I could let it rise and then wait a few hours before cooking it. Will it mess up my dough to let it sit longer than the recommended hour to let it rise??? How can I let it sit for a couple hours before baking it?
I make up a big batch of pizza/bread dough and store it in the fridge and use it through the week for pizza, rolls, bread, whatever I need. I just pull a big hunk about 1 lb off of the dough and let it warm up to room temp–it takes mine about an hour, though. Then I form it into the pizza shape and top and bake it.
And yes, leaving it out to over rise would be a mistake. You could still use it but the texture and taste wouldn’t be the same. It would probably be unpleasantly yeasty smelling and tasting.
