- Golden Corral Rolls brass baker's yeast –
1 package active dry yeast
1 / 4 cup hot water
1 / 3 cup sugar
1 / 4 cup butter or margarine
1 teaspoon salt
1 cup boiling hot milk
1 egg – Lightly beaten
4 1 / 2 cups sifted all-purpose flour
2 tablespoons butter or margarine – for brushing rolls.
Sprinkle yeast in warm water in large bowl (very hot water should be warm when dropped on wrist.)
Stir until yeast is dissolved.
Add sugar, 1 / 4 cup butter or margarine and salt to hot milk and stir until sugar dissolves and butter or margarine melts. Cool the mixture to 105-115 degrees.
Add milk mixture to yeast, then beat the egg. Beat in 4 cups flour, 1 cup both to form a soft dough. Using some of the remaining 1 / 2 cup flour powdered pastry cloth.
Knead dough lightly for 5 minutes, working in the rest of the flour (I use a flour pastry cloth and hands). Place dough in a bowl with hot butter, turn greased side up.
Cover and let rise in warm place until doubled in volume, about 1 1 / 4 to 1 1 / 2 hours. Punch dough and knead for 4-5 minutes on a lightly floured pastry cloth.
The dough should be sticky, but use the least possible meal flour your hands and the pastry cloth, otherwise the wheel will not be as light as feathers properly.
Pinch small pieces of dough into rolls about 1 1 / 2 to 1 3 / 4 inches in diameter. Place in rows, not quite touching, in a well greased 13 x 9 x 2 inch pan.
Roller Cover and let rise in a warm place until doubled in bulk, 30 to 40 minutes. Brush the tops of rolls with melted butter or margarine, and bake in oven at 375 degrees for 18-20 minutes or until golden.
Serve warm with plenty of butter. This Recipe makes about 2 dozen rolls.
Bon appetit!
